I love to bake, during Lockdown and the fact that I am on furlough I have spent a lot of time in the kitchen trying out new recipes and going back to my old-time favourites. Here are some of the recipes that I have used.

Best Ever Brownies, this recipes is amazing, it is my go-to brownies recipe and the recipe that I go to when I want to bake something or make a dessert to take to a friends for dinner. I’ve made this twice during Lockdown, they don’t last long as my husband and I are chocoholics!

I follow a few baking pages on Instagram and get the recipes from their sites and make them too. They are easy to follow and make delicious treats! I love that they both have written out their recipes in an easy format that is clear and easy to follow as well as giving some useful tips in their notes.

Phoebe Bakes, I have only recently discovered Phoebe and her bakes, her site looks incredible with loads of recipes I can’t wait to try! I’ve tried a few of her cookie recipes. This one was my favourite:

Terry's Chocolate Orange mini egg cookies: These were fantastic after discovering a bag of these mini eggs in our treat cupboard I decide to give these a go, and they were fantastic. If you like chocolate orange then I would recommend you make these. However, the recipe is using mini eggs which is only available at Easter. But I don’t see why you can’t make them using Terry’s chocolate segments you get in the bag. I also used up some mini eggs and made some without using the cocoa powder and just using flour as it says in the note section.

There are so many recipes that I want to try on Phoebe’s site especially Magic Star Fudge and Magic Star Cookie Cups! Maybe it’s because I just love Magic Stars! Such as big kid! But seriously what makes them so amazing!

Another site I used a lot is Jane's Patisserie. I can spend ages looking at recipes, and wonder what I should bake! One of my favourite recipes to bake from her is Kinder Bueno Cookie Bars, although I prefer just using kinder chocolate as I ordered a big box of amazon I have plenty of them to use up!

I have also made her Cheesecake for Two!, for a date night recently and this was yummy apart from I managed to break a teaspoon getting the biscuit base out! At Christmas, I made her Rocky Road Christmas Pudding, twice and that was incredible!

As with the other site, there are many recipes I want to try too, such as Triple Chocolate NYC Cookies and Chocolate Orange Shortbread

Although at the moment it can be hard to find some of the ingredients, hopefully, things will start to get back to normal soon.

Happy Baking!
